This month’s featured farmer is third generation Idaho® potato farmer Taylor Grant from Rupert, Idaho. Taylor and his wife Lynae have one son together, Denver. Taylor is proud to be a farmer because he can grow and cultivate food for communities all across the country. Farming also allows him to be an advocate for growing food sustainably and taking good care of the land. Taylor knows firsthand that the farm is the perfect place to teach his children the value of hard work. His favorite ways to eat potatoes are grilled or baked in the oven...and french fries and mashed potatoes from the Instant Pot!

Q: What is the proper baking time for a nice and fluffy Idaho® russet potato?

A: Bake the potato for one hour at 400°F. Make sure to put the potatoes directly on the rack. If you are baking many potatoes at the same time, put them on a sheet pan on a single rack in the oven. Stacking the potatoes on multiple levels in the oven will lead to the potatoes on the top rack being done before those on the bottom. Don’t forget to ditch the foil--it steams vs. bakes the potatoes, creating a moist spud.
